Parsley is an excellent source of provitamin A (beta-carotene), making it beneficial to eyesight, the capillary system, adrenal gland and the thyroid gland. Parsley is also loaded with vitamin C, potassium, sulfur, calcium, magnesium and chlorine. Ten sprigs provide 15 precent of the RDA for vitamin C and 10 percent for beta-carotene. So the next time you see parsley on your plate as garnish, by all means - eat it!
Both flat and curly parsley is easy to find year-round and have the same nutritious properties.
